Rogan Josh Recipe:
Ingredients:
1 lb boneless lamb or goat meat, cut into chunks
2 tablespoons vegetable oil
2 large onions, finely chopped
3 cloves garlic, minced
1-inch piece of ginger, grated
1/2 cup plain yogurt
2 tablespoons Rogan Josh spice blend
1/2 teaspoon ground fennel seeds
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon Kashmiri red chili powder (adjust to taste)
A pinch of saffron threads, soaked in warm water
Salt, to taste
Fresh cilantro leaves, chopped, for garnish
2 tablespoons vegetable oil
2 large onions, finely chopped
3 cloves garlic, minced
1-inch piece of ginger, grated
1/2 cup plain yogurt
2 tablespoons Rogan Josh spice blend
1/2 teaspoon ground fennel seeds
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon Kashmiri red chili powder (adjust to taste)
A pinch of saffron threads, soaked in warm water
Salt, to taste
Fresh cilantro leaves, chopped, for garnish
Instructions:
Sauté Aromatics:
Heat vegetable oil in a large, heavy-bottomed pot over medium heat. Add chopped onions and sauté until golden brown. Stir in minced garlic and grated ginger, cooking until fragrant.
Add Meat and Spices:
Add the chunks of meat to the pot, stirring well to coat them with the sautéed aromatics. Mix in Rogan Josh spice blend, ground fennel seeds, ground cardamom, ground cinnamon, ground cloves, and Kashmiri red chili powder. Cook for a few minutes until the spices are fragrant.
Incorporate Yogurt:
Lower the heat and gently fold in the plain yogurt, ensuring it blends smoothly with the spice-coated meat. Cook until the oil starts to separate from the mixture, intensifying the flavors.
Simmer and Tenderize:
Pour in enough water to cover the meat and add the saffron threads along with the soaking water. Season with salt, cover the pot, and let the Rogan Josh simmer over low heat for 1.5 to 2 hours, or until the meat is tender and the flavors are well-developed. Stir occasionally and add more water if necessary to prevent sticking.
Serve:
Once the meat is tender and the gravy has thickened to your desired consistency, remove the pot from heat. Garnish the Rogan Josh with freshly chopped cilantro leaves.
