Here's a delicious and nutritious recipe that incorporates sustainable and ethical eating principles:
Roasted Vegetable and Chickpea Salad
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 large sweet potato, peeled and diced
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
Instructions:
- Preheat the oven to 400°F.
- In a large bowl, combine the chickpeas, sweet potato, red onion, red bell pepper, olive oil, smoked paprika, salt, and pepper. Toss to coat the vegetables evenly.
